• 1 pound boneless, skinless chicken
• 1 onion, chopped (about 1 cup)
• 2 carrots, chopped (about 1 cup)

• 2 tablespoons Thai red curry paste
• 1 cup light coconut milk (about 1/2 of 13.5 ounce can) 1 cup chopped spinach
