This week’s column will be my final one appearing in The News as Thursday is my last day. After working here for 24 years, I have taken a job at KOTV News on 6 in Tulsa and will start my new job on Monday.

The kids are all back in school and I know many of you are short on time to make healthy low-carb meals for you and your entire family. Today I’m going to offer a couple recipes to make in your slow cooker to save you some time.

This slow cooker crack chicken recipe is very easy. It takes just 10 minutes to prepare. This recipe uses ingredients you likely already have on hand. This recipe is one of those meals that will please almost anyone ... even if they aren’t low carb.

This chicken comes out soft, creamy and almost like a dip. You can use it in a multitude of ways, including sandwiches on lowcarb bread or buns, as a dip with low-carb veggies like celery or bell peppers or in a low-carb wrap.
