INGREDIENTS

2 cans (14.5 ounces) diced tomatoes

• 1 can (15 ounces) garbanzo or kidney beans (drained and rinsed)

• 1 can (15 ounces) black beans (drained and rinsed)

• 1 can (15 ounces) water

• 2 cups frozen corn

• 1 large onion, chopped (about 1 1/2 cups)

• 3-4 teaspoons chili powder

• Ground black pepper to taste

• Shredded cheese, optional INSTRUCTIONS

1. Put all ingredients except cheese in a large pot. Heat to boiling over high heat. 2. Reduce heat. Simmer about 20 minutes or until hot (stirring occasionally). Top each serving with a tablespoon of shredded cheese if desired.
