Skewered Veggies

Makes 1 serving

Ingredients

• 1 cup vegetables (summer squash, peppers, cucumbers, grape tomatoes, mushrooms, jicama, turnips)

• Low fat salad dressing

Equipment

• 1 cutting board

• 1 knife

• 1 skewer (if you do not have skewers, arrange the vegetables on a plate.)

• 1 plate

Directions

• Wash hands and surfaces.

• Wash vegetables. Peel cucumbers, jicama, and turnips.

• Cut vegetables into chunks.

• Place the chunks on a skewer.

• Drizzle salad dressing over vegetables.

• Refrigerate leftovers immediately.

KIK It Up! is a summer and after-school program for kids ages 6 to 15 years. This program encourages kids to eat healthier snacks and exercise more through engaging activities over 7 different lessons. Participants will discover practical recipes with 5 ingredients or less that they can prepare for themselves and their family.
