Chicken recipes for the family

I’m now two weeks post-op from my major back surgery on Aug. 14. All I have to say is just WOW! I thought I had braced myself for the kind of soreness I would be in. I didn’t come close to realizing the magnitude of simply sitting in a chair.

My surgery went fine though I still have some mild pain down the left side of my leg. It’s too early to tell if that is because I wasn’t fixed completely, or if there’s still some swelling around my nerves from the surgery. Only time is going to tell. I will say that my pain has subsided quite a bit. That is all I could have asked for.

I haven’t really been following a low-carb diet. One, I couldn’t really cook, and two, absolutely nothing sounded good to eat for quite awhile after sur gery. I restarted my harsh low-carb reboot last week which means I drink shakes twice a day and then have something light for dinner. I often do this as a way to restart my metabolism after I’ve done nothing but eat carbs ... which I have done quite a bit lately.

For those of you that emailed me while I was out after surgery, thank you for all your kind words and prayers. They meant the world to me while I was recovering (which I still am).

I think this week’s recipes are going to be something quick that moms can make for the entire family. I have so many friends with young children and they are really struggling in trying to work, get the kids to school, help with homework and do all of the tasks around the house ... all while thinking of things to cook for their families for dinner.
